Day 14-Two Weeks Down!!!!


Tomorrow ill take another fit test and take my weight and measurements again. But for today im taking it easy and taking a day off from my workouts. So make sure you check in tomorrow to see how ive progressed. Here's what I ate today and I think every Sunday ill post a recipe. I may even have a vote for the recipe most wanted throughout the week.

Workout: None

Food:
Breakfast-Banana
Lunch-Protein Shake
Snacks-Apple slaw, granola, yogurt
Dinner-Rosemary Garlic Chicken, red skins potatoes and Apple Slaw


Dinner Recipe:(Makes 4 Servings or 2 big servings)
I dont know the exact amount of everything I usually just add until it looks right!



Chicken:

1/2 Tablespoon minced Garlic
1 Pkt. Himalayan salt
Pepper to taste
Rosemary
3 Tablespoons of Grape Seed oil or EVOO
2 Boneless Skinless Chicken breasts

-In gallon or quart sided ziploc bag, add garlic, Himalayan salt, Pepper, Rosemary and oil and mix vigorously.
-Add chicken to ziplock bag and let marinate for 45min to an hour in the fridge.
-Start to cut potatoes in quarter sized pieces(they can be bigger but it will take longer to cook).
-Preheat oven to 350 Degrees





Potatoes:

In a Large Bowl add
1/2 Tablespoon Minced Garlic
Himalayan salt
Pepper to taste
Rosemary
Cut Potatoes
Drizzle of Grape Seed oil or EVOO

-Mix in a bowl the Garlic, Salt, Pepper, Rosemary and Potatoes together and then, drizzle oil over all the Potatoes so they have an even coat of the ingredients on it.
-Spread potatoes evenly on a cookie sheet and Bake at 350 for 45min to an hour
-Set timer for 30min. After 30min take marinated chicken out of the fridge and place in pyrex to bake.
-Set Timer for 25min and check chickens done-ness. Thermometer should read at least 165 for Chicken. if it doesnt read 165 put it in longer. Take both chicken and potatoes out when done and enjoy!!




Apple Slaw:

So I made this earlier in the day but you can either do it first before you marinate the chicken or after. The longer it sits the more the apple will absorb the mixture.

2 Apples(You can use a your favorite apple but we used Golden Delicious)
1 Carrot(shredded)
2 Tablespoons Lemon juice
1 Tablespoon Pure Honey
Pepper
Cinnamon
2 Tablespoons Grape Seed oil
Craisins or Raisins
1 Celery Stick(optional)

-In small bowl or shaker bottle add Lemon Juice, Honey, Pepper, Cinnamon and Grape Seed Oil. Mix or shake until you've made a dressing.
-In separate bowl drizzle dressing over cut apples and Shredded carrots. Mix together evenly and add craisins.
-Place mixture in the fridge to cool and marinate for 45min.
